Fish Tacos

Ingredients:
2-3 Tilapia Filets
Corn Tortillas
2 Limes
Olive Oil
Fajita Seasoning
Cabbage (finely shredded)
Tomato (diced)
Monterrey Jack Cheese (shredded)
Cilantro (chopped)
Sour Cream
Chipotle Salsa (can or jar)
Ground Cumin
Directions:
Fish: Season fish with juice of one lime and fajita seasoning. Let the fish marinate for 15 minutes. Preheat oven to 350 degrees. Heat oven ready skillet on stovetop with 2 tablespoons olive oil. Place fish in skillet and sear for 2-3 minutes each side. Once fish is browned on both sides, place skillet in preheated oven for 7-10 minutes.
Chipotle Cream Sauce: In a mixing bowl, combine ½ cup sour cream, ¼ cup chipotle salsa, 1 tsp cumin, juice of ½ lime and chopped cilantro to taste. Mix the ingredients together and place covered bowl in refrigerator.
Tortillas: In a small skillet, place ¼ tsp butter and sauté corn tortillas. Prepare 6-8 tortillas.
Tacos: Remove fish from oven. Arrange tortillas on plate, put ½ tilapia filet per tortilla, shredded cabbage, diced tomatoes, cheese and chopped cilantro in taco. Drizzle with chipotle cream sauce to taste. Serve with Mexican rice and black beans.
